It is possible to freeze brie cheese safely for at least two weeks, according to the Marin French Cheese Company. The texture and taste do not suffer.
When refrigerating brie, cheese lovers should not wrap an entire round. Air circulation is important to prevent mold from developing. A loose wrapping of waxed or parchment paper is sufficient. This keeps the round fresh for a few days.
However, wedges of brie covered in plastic wrap store well for several days in the refrigerator. Whether whole or sliced, brie should sit out to reach room temperature before serving. This softens most varieties of brie, creating the traditional texture.
