All varieties of tofu can be successfully frozen, according to About.com. Frozen tofu contains less moisture than fresh tofu, which makes it a good choice for soaking up flavorful sauces.
Tofu needs to be pressed and drained before freezing. Removing excess water keeps ice crystals from forming inside the tofu. Tofu is drained by placing it between layers of paper towels and laying a heavy object on top, such as a cast iron frying pan or a large book. After 15 minutes, the tofu is drained enough to freeze. Freezing in a plastic bag with all excess air removed prevents freezer burn.
