Lemons are a sour citrus fruit that can be easily frozen. Lemons can be frozen and stored whole or in wedges.
To freeze whole lemons, wash thoroughly and allow to dry. Place the fruit in freezer bags or containers. When needed lemons can be thawed for 15 seconds in the microwave or in a cold water bath.
Freeze lemon wedges in plastic bags so that air can be easily removed before storing. Slices can be thawed or used frozen to flavor hot and cold beverages.
Frozen fruit has a freezer shelf life of 8 to 10 months. After this time has passed, the lemon may experience freezer burn and lose its color and flavor.
