Dogs can eat lettuce. Romaine lettuce and arugula are nutritious for dogs, as are kale, Swiss chard, spinach and collard greens. While dogs can eat iceberg lettuce, that variety does not contain many nutrients.
It is best to chop and steam lettuce and other greens before feeding them to a dog. Steaming is the best cooking method when it comes to preserving the nutrients.
Dogs can eat a variety of other vegetables, including beans, cucumbers, squash, broccoli and peppers. Some vegetables are toxic to dogs, however, including onions and garlic. Consumed in quantity, they can cause red blood cell damage. Rhubarb is also toxic to dogs; it can cause kidney failure.
