Ammonium acetate decomposes into acetamide and water when heated to more than 165 degrees Celsius. Its melting point is between 110 and 114 degrees Celsius, which is a relatively low value for a salt. Its odor is similar to that of acetic acid. It is used in the food industry as an additive and an acidity regulator.
