Evidence about the health benefits of garlic can be sparse, but at least one study shows that garlic is effective in preventing heart disease, according to WebMD. Eating garlic can increase a person's production of hydrogen sulfide, relaxing blood vessels and increasing blood flow.
The 2007 study shows that garlic, when digested, is processed by red blood cells to produce the cell messenger hydrogen sulfide. The relaxed effect on blood vessels and increased flow helps lower the risk of heart disease. After discovering that eating garlic is a way to naturally produce hydrogen sulfide, researchers plan to incorporate this research into developing more beneficial, natural garlic supplements.
