What are garlic scapes?

Garlic scapes are the stalks of garlic plants that appear around a month after the first leaves. Garlic scapes do not produce flowers, but they can form bulbs and also grow garlic.

Gardeners often throw away garlic scapes, but they are edible. Garlic scapes may grow into a curved position, but are ready for harvest when the stalks appear tall and straight. Garlic scapes become harder the longer they grow and may require some cooking before eating. When you harvest garlic spaces at a young age, they are tender and can work well as a topping. If your garlic scapes are tougher, you can saute and pickle them, mix them with greens, use them over pasta or cook them with eggs.
