Gas ranges on stoves equipped with electric ignitions are generally more efficient than standard electric ranges. The California Energy Commission says these types of gas stoves operate at around half the cost of electric stoves. As of 2015, energy-efficient electric ranges, including induction tops, may be as efficient as gas.
One reason gas ranges are typically more efficient than standard electric models is that the heat is either on or off, with little residual energy wasted. Electric ranges usually require time to heat up and cool down. Gas ranges also provide additional heat control for cooking food, because turning the heat element up or down results in an immediate temperature change.
