Kefir granules, also known as grains, are an ingredient in the fermented milk drink kefir that cause the fermentation process to occur. Cauliflower-like in appearance, the grains are a blend of bacterias and yeast that break down lactose and are removed before the drink is consumed.
Made up of lactobacillus bacteria and various yeasts, kefir grains are gelatinous in texture and can be added to any kind of milk to produce a drink similar to a probiotic yogurt. The granules, which can grow to the size of a walnut, can be used to make several batches of kefir, and they are most popular in Eastern and Northern Europe.
