There is no need to leave the oven door open during broiling if the food is positioned the proper distance from the heating element. Leaving the door open can lead to greasy splatters outside the oven during broiling, but it can be useful for monitoring the food.

Position food as stated in the recipe, measuring the inches from the top of the food to the bottom of the heating element. Although it is not required, leaving the oven door open to watch for flare-ups is a good idea when broiling fatty cuts of meat. It is also useful when broiling items that require only a short amount of time to be broiled. Keeping the door open makes it easy to see when the food is properly browned in order to remove it before it has a chance to burn.
