In the refrigerator, fresh pork and uncured ham last up to five days. Cured ham can remain safe for up to 7 days. Ground pork and liver has a shorter shelf life, lasting around two days.
Do not allow pork to sit at room temperature longer than for hours as bacteria grows rapidly between 40 and 140 degrees Fahrenheit. Refrigerate pork at temperature below 40 degrees Fahrenheit. Pork should be kept in its original packaging, and place it in the coolest part of the refrigerator. If not used within four days, place the pork in the freezer. In the freezer, pork and uncured ham may last up to 6 months.
