Newer pressure cooker gaskets consist mainly of silicon or other polymers because they provide a more secure seal. They are less likely than rubber gaskets to crack, become brittle or hold food odors. Replacing the gasket when it becomes inflexible, dries out or shows signs of damage or wear keeps the pressure cooker in good working order. Replacement pressure cooker gaskets should match the model exactly for a proper fit.
