Worcestershire sauce, developed by the British during their occupation of India, is one of the trickier sauces to substitute for because of its complex mix of flavorings. Commercial preparations vary, but the original recipe called for malt vinegar mixed with molasses, sugar, salt, spirit vinegar, anchovies, tamarind extract, garlic, onions, spices and other flavorings, including pickles, peppers, soy sauce, cloves and lemons. This mixture is then fermented in oak barrels for three months or more.
