Stroke survivors should eat a balanced and healthy diet full of fruits and vegetables, according to the American Stroke Association. Limiting foods high in sugar and trans fats while eating a variety of whole foods is key.
Added sugars should make up no more than half the empty calories in a stroke survivor's diet, and sodium intake should be limited, recommends the American Stroke Association. Diets high in sodium have been linked with high blood pressure, which is a major stroke risk factor, reports WebMD. A person's stroke risk increases when his diet contains more than 2 teaspoons of salt per day.
