Cucumbers are ready to harvest when they are completely green, uniformly firm and the appropriate size, which is normally 50 to 70 days after planting. This is assuming they were planted in nutrient-rich soil and the weather has been consistently warm.
The type of cucumber planted determines the appropriate size. Slicing cucumbers are ready at 6 to 8 inches in length, while dills shouldn't get longer than 4 to 6 inches.
People making pickles need to harvest the cucumbers at 2 inches when the vegetables are firm and still have a slight give when pressed. Hard or yellow cucumbers indicate ripeness, which makes the cucumber unsuitable for eating.
