Popular varieties of peaches grown in the United States include O'Henry, Red Beauty, Red Top, Santa Rosa and Elegant Lady. About 2,000 varieties of peaches are grown worldwide.

Peach varieties fall into three general categories based on how easily the flesh of the fruit separates from the pit: clingstone, freestone and semi-freestone. Clingstone peaches have flesh that adheres strongly to the pit. Freestone peaches have flesh that separates easily from the pit. Semi-freestone peaches are a blend of the two.

Varieties of clingstone include Santa Rosa and Red Beauty and are popular for canning or baking. Freestone varieties such as O'Henry, Red Top and Elegant Lady are better eaten fresh.
