What internal temperature should you cook rabbit meat to?

Rabbit meat should be cooked to an internal temperature of at least 160 degrees Fahrenheit. Cooking times depend on the size of the cut and the cooking method.
When roasting rabbit meat in the oven, cooks set the temperature to at least 325 degrees Fahrenheit. A 2-pound, cut-up rabbit takes around one hour to roast, while a whole rabbit weighing 2 to 2.5 pounds can take up to around one hour and 30 minutes to roast. For a stuffed rabbit, cooks add another half hour to the roasting time. Rabbit can also be braised for about one hour or broiled for approximately 15 minutes on each side.
