How do you make Ohio State buckeye candy?

Ohio State Buckeye candy is made using peanut butter, paraffin wax, chocolate and butter. It is very easy to make and can be made in slightly more than an hour.

This candy takes a little artistic skill when making the "eye," but is easy enough for beginning cooks to make quickly. It yields 48 servings.

Ingredients:

• 1 lb. confectioner's sugar
• 2/3 lb. smooth peanut butter
• 1/2 lb. milk chocolate
• 1/2 lb. semisweet chocolate
• 6 tablespoons softened unsalted butter
• 1 tablespoon paraffin wax

1. In a large bowl, mix together the peanut butter, sugar and butter together until smooth.
2. Roll the mixture into small balls, about the size of walnuts. Insert a toothpick into each ball.
3. Line a baking sheet with waxed paper and place the balls on the sheet. Place them in the freezer and allow them to set for about 10 minutes, or until firm.
4. In the meantime, melt the chocolate and paraffin wax in a double boiler. Remove the balls from the freezer.
5. Holding on to the toothpick, dip each peanut butter ball into the melted chocolate, leaving the area near the toothpick uncoated. The part lacking the chocolate will be the "eye" of the candy. Dip each ball quickly to prevent the peanut butter from melting.
6. Using a fresh sheet of waxed paper and a cookie sheet, place each dipped ball back on the cookie sheet. Refrigerate for at least 30 minutes before serving.
