The plural of cheese is cheeses. Cheese is a food that primarily consists of curd, which is the semisolid substance formed when milk curdles or coagulates.
When milk curdles naturally, it sours and forms an acidic curd, which releases whey, a watery fluid containing the soluble constituents. The result is a semisolid curd, or fresh cheese. In modern factories, cheese is mass produced with standardized recipes and techniques. Cheese production reduces about 10 volumes of milk to one volume of cheese. Cheese products vary based on selection and treatment of the milk, fat content, heating, pasteurizing and the addition of enzymes or cultures of bacteria, molds or yeasts.
