To make an omelet with a crepe maker, the cook stirs mushrooms with butter on the hot cooking surface for a few minutes. He combines lightly whisked eggs with ham, spring onions, crème fraîche, salt and pepper in a bowl, then pours this egg mixture over the mushrooms and allows the concoction to cook for a few more minutes. When the omelet is nearly ready, he scatters cheese on top, folds it and allows it to cook for one more minute.
