What does cardamom taste like?

Cardamom has a sweet flavor similar to those of grapefruit and ginger. This spice also includes floral and soapy flavors, along with green notes and a cool menthol undertone.

Used in Asian and Indian cooking, cardamom is available in two main forms that present slight differences of aroma. Green cardamom is usually used in India and Malaysia and has a strong taste and a resinous fragrance. In contrast, black cardamom, also called Bengal cardamom, has a smoky, mint-like aroma. Cardamom comes from plants in two major genera, Elettaria and Amomum. The former produces green cardamom, while the latter produces black cardamom.
