There are 4 grams of net effective carbohydrates in a one-half cup of chopped raw carrots. A medium baby carrot weighing around 3 ounces has just 1 gram of carbohydrates. Raw carrots have fewer carbohydrates than cooked carrots.

Among root vegetables, carrots rank the lowest in carbohydrate count. Carrots are also a source of beta carotene, alpha carotene and Vitamin A. Just one-fourth cup of grated raw carrot provides an entire day's supply of Vitamin A. Carrots also contain Vitamins K, B6 and C and are a good source of potassium. Diets rich in carotenoids, which are found in carrots, may help lower insulin resistance and improve glucose metabolism.
